When I ate a lot of meat, one of the things I loved was a good BLT. Well cooked and fatty crispy bacon slathered between two slices of toasted bread with mayo, tomato, and lettuce.
Good vegan bacon is hard to come by, but I think I stumbled across a recipe that is pretty decent. It is very easy as well, and involves very little cook time, and very few ingredients.
Well, no long drawn out story today, let’s just get to the recipe!
- 1/4 block extra firm non-silken Tofu
- Oil (I use canola)
- Marinade of some kind (I just combine garlic powder, soy sauce, terryaki sauce, some water, and pepper in a bowl)
- Lettuce (I prefer romaine, more vitamins and minerals, but you can add iceberg, or even arugula or spinach, whatever floats your boat)
- Vegan Mayo
- 2 slices of bread (I just use cheap wheat bread from my local grocery store)
How to Make:
First thing you do is take your block of tofu, and slice it into a few fairly thin slices, you want it to be partly crispy, and dip those slices into your marinade. Keep them there for about 10 minutes.
While you wait, preheat a pan on the stove to medium-high.
Oil the pan, this helps the tofu strips to become crispy. Then place the marinated tofu into the pan.
Turning occasionally, but allowing to brown and burn slightly, get the bread ready. I just place mine in a toaster.
When the toast pops up, place on a plate and add vegan mayo, tomato slices, and romaine lettuce to one side. I add vegan mayo to both sides.
When the tofu strips are crispy and delicious, add them to your sandwich, close, and enjoy your delicious vegan BLT!
Not a hard recipe to follow, and is really tasty and much healthier for you than bacon!
